Born. 

I was born and grew up in Ecuador where I was spoiled with exotic local foods that came from all regions: highlands, coast and jungle.  Ceviches, hornados, locros, encocados and so many more delicious dishes that became part of who I am as a chef.

At age 16 I moved to France with my family where I uncovered a whole world of gastronomic technique. For the next 10 years I studied, and worked and traveled all things culinary. From Europe, to the US, to Asia & the Nordics, my perspective is global.

Our tasting menu is my personal journey through childhood in Ecuador, coming of age in France and adulthood in the US. It’s truly Ecuadorian Born, Globally

Empanadita de choclo - Canelazo

Andean corn (Morocho) filled with creamy corn and cheese.

Cilantro aioli and queso manaba

Ostra Tropical

Oyster with passion fruit and chamomille

Tributo al Oriente

Amazonian bouquet, grilled chontacuro

Tamal de Mejido

Filled with sweet cheese. Dark chocolate sauce

Coconut shrimp ceviche

Coconut milk infused with coffee, yellow and red pepper, golden berries, toasted coconut and pickle spicy pepper

 

Langostino Ratatouille

King prawn and chorizo, sweet plantain ratatouille, chipotle aioli

Paiche o Pork Belly

Green plantain puree, prawn bisque, garabato yuyo

Our drinks also follow our motto of “Ecuadorian born. Globally inspired.” We make our own cocktails using fresh, local ingredients and local liquors whenever possible. We also have an outstanding selection of wines from Ecuador and France.

start with something fresh​
Frescaso 

Ataco infused with gin, pineapple peel & lemongrass

Smokey Margarita 

Ecuadorian Miske, ginger syrup, smoked Palo Santo

Acholada 

Dry sidra, goldenberry coulis  and passion fruit juice

move on to something more complex

Tres en Raya 

Aged rhum, whisky, Amaretto, spices syrup, orange juice, lemon juice

Nube de Café

Local gin, coffee shrub, cocoa liquor, lemon juice

Guaya Punch 

Guava, Ecuadorian whisky, citrus fruits, lemongrass

finish strong

Romerillo 

Infusion of rosemary, extra dry vermouth, gin, citrics bitter

Negroni de Maní 

campari, Vermouth rosso, gin infused with peanuts

Negroni de Café  

campari, Vermouth rosso, gin, coffee cold brew
