I was born and grew up in Ecuador where I was spoiled with exotic local foods that came from all regions: highlands, coast and jungle. Ceviches, hornados, locros, encocados and so many more delicious dishes that became part of who I am as a chef.

Inspired.
At age 16 I moved to France with my family where I uncovered a whole world of gastronomic technique. For the next 10 years I studied, and worked and traveled all things culinary. From Europe, to the US, to Asia & the Nordics, my perspective is global.

Rooted in local ingredients, flavors and traditions, we have combed the globe to bring back new techniques, contemporary dishes and a spirit of progression to create a restaurant that tells the story of today’s Ecuador through the language of food. For us, “Ecuadorian born. Globally inspired.” is both our motto and our mini manifesto.
