Born. 

I was born and grew up in Ecuador where I was spoiled with exotic local foods that came from all regions: highlands, coast and jungle.  Ceviches, hornados, locros, encocados and so many more delicious dishes that became part of who I am as a chef.

At age 16 I moved to France with my family where I uncovered a whole world of gastronomic technique. For the next 10 years I studied, and worked and traveled all things culinary. From Europe, to the US, to Asia & the Nordics, my perspective is global.

TASTING MENU

Our tasting menu is my personal journey through childhood in Ecuador, coming of age in France and adulthood in the US. It’s truly Ecuadorian Born, Globally Inspired. I hope you enjoy!

Corn and cheese Empanadita 

Andean corn (Morocho) filled with creamy corn and cheese.

Cilantro aioli and queso manaba

La Ostra Tropical

Oyster with passion fruit and chamomille

Tributo al Oriente

Amazonian bouquet, grilled chontacuro

Chicken and Corn Tamal

Chicken Yellow corn tamal, peppermint and avocado sauce, bell peppers

Mahi Mahi peanut ceviche

Diced cucumbers, toasted peanuts, cilantro tops. Served with chulpi corn

 

Langostino Ratatouille

King Prawn served with sweet plantain sango (made with vegetables, peanuts and peppers) with smoked ratatouille

Paiche o Pork Belly

Smoked Amazonian fish, cassava puree, prawn bisque, garabato yuyo

or 

Pork Belly confit, Andean potato llapingacho, purple cabbage and carrot sauerkraut

 
Inti

Pickle Watermelon pulp, strawberries, Hibiscus flower soup, freeze-dried cacao mucilage

Killa

Palo Santo mousse. Goldenberry sorbet, Hacienda Victoria 75% chocolate ganache

We make our own cocktails using fresh, local ingredients and local liquors whenever possible. We also have an outstanding selection of wines from Ecuador and France.
